Day 19-22

I prepared the leaven on the 19th day and left it over night. It grew over night to cover the entire glass bowl. I repeatedly did the float test but the leaven kept sinking. I continued to the following steps of making the dough for the baking process. Over the course of the day I kneaded the dough and placed it in a floured baking towel to expand. After the dough expanded once more, I placed it in a copper pot made an X on the top and baked it for about an hour ( 20 min with the lid and 40 without) . I left it in longer than usual because the bread would not bake thoroughly.
